Join winemaker Morten Hallgren in a cellar experience with sparkling wines. Learn about the ancient process of champagne-making Methode Champenoise : hand-riddling and disgorging amidst the riddling racks in the cellar which holds the 2011 Brut after it spends six years aging en tirage. Participate in dosage trials for the 2011 Sparkling Brut and taste through Ravines sparkling wines including those from our first vintage: 2006 Brut, 2006 Brut Nature, 2007 Brut, 2008 Blanc de Blanc. Chef Scott Riesenberger will present a Grazing Slate of four savory dishes he has created to pair with the flight of sparkling wines while share his inspiration for the dishes he creates and his experiences in the Champagne region of France.
